Probably something to do with etiquette for royal occasions. I read somewhere that Liz is the last royal female to actually ride like that, not sure if its true or not. The tradition for females riding side saddle dates back to 1382, when Princess Anne of Bohemia rode side-saddle across Europe on her way to marry King Richard II.
